Event and USBG Membership Drive

Hey Everyone!

As you know, I am and have been a member of the USBG(United States Bartenders Guild), Illinois Chapter. What is the USBG you may ask? Well here it is.....



The USBG is one of the best things I have done in my professional career. Meetings, education, competitions, a nationwide brotherhood of like minded bartenders who are just as passionate about this industry as I am. I will always be a member of the USBG and will continue to encourage bartenders( esp "urban market" bartenders who aren't exposed to this part of the industry as much) to join and become active members of the family.

So with that being said, tonight, the USBG-IL chapter is hosting a tailgate party and membership drive. So if you haven't joined, or are interested in learning more, join myself and the rest of the Chicago family( well those of us who didnt make it to Portland for cocktail week) at The Brixton tonight from 7-10pm.

Product Review- Wilks & Wilson - Purveyors of Fine Elixers

Today I am happy to talk about a product that I truly enjoy working with. Alot of time, I make my own syrups, cordials, etc, But a couple good friends of mine have a product line that I really enjoy using in my cocktails.


Wilks & Wilson( Greg Wilson and Zachary Wilks) produce hand crafted, organic, and mostly natural elixirs that were intended for use in Non alcoholic beverages, but they are delicious in some of the classic cocktails of yesteryear. Now the interesting story about how I came to meet these guys is interesting. 2 years ago while I was in New Orleans for Tales of The Cocktail, Some friends and I were throwing around the idea of creating a product. Bitters, Syrups, and even a carbonated cocktail came into play. So someone close to me said, "hey you should meet this guy down here named Greg, who has a line of syrups. Its looks pretty cool." So thru the magical power of twitter( its great when used correctly) we tracked each other down and when I found Greg Wilson, I planned on  just talking but he handed me a 6 pack of his product and his card and said please stay in touch. So after getting home and unpacking a whole suitcase full of booze(don't ask, just come to TOTC and you'll find out) I took a look at this product.. What struck me 1st was the pictures on the labels and the wide variety of flavors and distinctions between them. Needless to say I was intrigued. So fast forward to this past Tales of the Cocktail and not only did I run back into Greg, but I got to meet Zachary Wilks as well. Great guys with a Great product that I can stand behind and use when taking care of my events.


Now that you got some background, lets get to the meat of the story, the product!!!

Now some of the best cocktails in the country are being made with Wilks and Wilson as it is available in Chicago, Indiana, St. Louis, Michigan, Massachusetts, and Kansas City most notably.

As stated earlier my favorite cocktail to make with their product is the "DrinkxXx On Me Mojito" using the Lime Mint Simple.. So why not share it with all of you..  I debuted  it last year at a guest bartending shift I had. It has since become a staple.  A different take on the Mojito recipe..

Big Start to 2014

Hello everyone!!

Took some time off from working and writing, but I would like to say Happy New Year from DrinkxXx On Me!!!

So I have some goals for myself in thus new year and one is to bring you all a blog post every day, starting today. Whether its Lifestyle, drink reviews, spirit reviews, some of my adventures in this crazy hospitality that I work in, or just if I want to shoot the Sh*t with all of my readers, you will all get something alcohol related from me. So GET READY!!

But with that being said, its been a hectic couple weeks in 2014 so far ni the liquor world. 2 BIG acquisitions happened in the first 14 days of 2014.

For one Sean "Diddy"Combs, the man behind the emergence of Ciroc, has partnered 50/50 with Diaego to acquire Deleon Tequila. Diddy is a master at marketing and getting the most out of his products. He puts his name on it and its golden. And Diageo, well, no words need be spoken about them. The strong Distribution, and access to influencers (like Combs) and marketing makes them a formidable team to push Deleon to the top of the tequila charts in 2014. Deleon is a 100% Blue agave tequila. Deleon was created in 2008, and hit the US market on Cinco De Mayo 2009. Its expressions are as follows, Blanco, Reposado, Anejo, Extra Anejo, and Leona. I'm looking forward to trying it, creating some cocktails and giving all of you a nice
review.

And just when the news of Diddy, started to quiet down, then a HUGE announcement came across all of our social media platforms...
Japan's Suntory ( which boasted the likes of Bowmore scotch and Yamazaki Japanese Whiskey) now has acquired Beam, Inc for a whopping price of $13.6 Billion dollars. Now nothing says America more than some good ol bourbon but now, 2 of the most recognizable names in whiskey, Jim Beam and Makers Mark will belong to a Japanese owner. Along with those brands, in this deal,  Suntory will have, most notably Courvoisier, Laphroaig,  and Knob Creek.

So its been some big moves made in the spirits biz to start the year off.. Cant wait to see what the rest of 2014 brings!! See you tomorrow with a product review of Wilks and Wilson, LLC..

Chicago Independent Spirits Expo

Happy Thursday folks! I'm just climbing out of bed after a WONDERFUL night at the Independent Spirits Expo at the Chicago Hilton last night. All I can say is wow. A fun night filled with tasting some excellent spirits, and chatting it up with some of the industries finest. 

Last years event had 80 suppliers and over 400 independent and artisan spirits from all over the world. This years was no different  I tasted thru the entire event and was pleased with everything I was able to sample. From some of my favorite spirits, Like Few Whiskey, ANYTHING from the St. George portfolio, Diplomatico, and Del Maguey, to some newer brands that I haven't had the opportunity to try. 

One standout to me was the Barrel Aged Gin from Smooth Ambler Spirits. WOW is all I can say.  Their Barrel aged gin uses their award winning Greenbrier Gin as the base distillate and is aged 3 months in Oak barrels. This is a complete sipper. To me, it still tastes like a London Dry Gin but I get some peppery notes on the finish so it feels like a Rye whiskey. So my palate was very happy with this spirit!  Check out the video of the distillery here: 





Also at this years indie spirits expo was the authors round table  and my good friend Mr. Warren Bobrow was one of the speakers. Warren has been featured on this blog in the past and now my main man is releasing his 1st cocktail book, "Apothecary Cocktails: Restorative Drinks from Yesterday and Today." Had the opportunity to have some conversations with my friend this week and even got to thumb thru the book as well. Needless to say this is not just a cocktail book. Back at the turn of the century, most would go to their local apothecary and would get prescribed something herbal that includes some sort of spirit for all your ailments. Without giving to much of the book away, there are some great recipes in there that were used for Medicinal purposes. Back to Blogging/Drink One Teach One



Hey everyone!

Its been a long time but Mr Mixologist has finally got the blogging bug back in his system. I have been a part of soooo many great events this year, and have so many coming up that I want to share them with all my Twitter/Facebook/Instagram followers. But before I get going I first want to say THANK YOU, to all who have supported me and DrinkxXx On Me bartending Service over the last few years, We started off doing house parties and now have grown to working for various spirit brands and hosting and bartending some of the biggest events here in Chicago.Now for those of you who have been a subscriber to this blog, thank you and now you're in for a treat because we will have postings on everything from Spirit reviews, to some of my favorite bar/restaurants, How to cocktail videos, and the ever infamous "Cocktail Thought of the Day".

So now that brings me to the point of this post today.. my ever famous catchphrase "Drink One Teach One". many have asked me where this came from and why do I always say it and use the hash tag on twitter( #DrinkOneTeachOne) Well here is your answer....

This phrase is the gist of my entire career. Unfortunately, in my community the overall "cocktail" scene is lacking. So when I''m working, or creating menus for clients I try to bring a little more cocktail awareness to the forefront. I love alcohol, I love all the different spirits that are out there(for the most part) and I love learning while I'm enjoying cocktails. Learning about the origin of a cocktail, or breaking down the flavors in the base spirit, or just figuring out all the ingredients in a cocktail while tasting blindly are some very enjoyable things to "Drink One Teach One". Understand spirits and know what you are putting inside your body. Its called "Edutainment" learn something and have fun all at the same time.

Now that im back in the blogging world, I look forward to sharing with you all my experiences, tastings, evenings out, events, recipes, and just views on different trends in the cocktail world. Blessed to be a Blessing Toy Drive


We have the privilege of being one of the sponsors at the 3rd annual Official Anais Toy drive, benefiting A New Me foundation. Last year it was our 1st year and was held at the Lacuna Artist Lofts and was a memorable experience. This years toy Drive will be held at Donna's Cafe at 1255 S. State Street from 4p-7p.

A New Me Foundation is a non for profit organization that provides for victims and survivors of Domestic Violence. Randi Knight from Soul 106.3 will be a special guest host and speaker at this years toy drive which including US will have sponsorships from 1604 Designs, the Hip Hop Democrat, Speak H.O.P.E., and others.

Product Review- Penn 1681 Vodka

Yesssss!!!! Just what the world needed... ANOTHER Vodka company!!! But this time I was a litte more interested than Ive been before. So when I got the follow on twitter from Penn 1681, I wanted to test it out immediately.



So thru some negotiating and tweeting with the good people over there, I was shipped a bottle of Penn 1681(along with a few other goodies, but those are for future blog posts). The bottle looks amazing! By far one of the most decorated and intriguing bottles Ive seen. Really stands out and would most definitely be an eye catcher on the back bar, or on the shelves of a liquor store. So on to the best part  of a review... The TASTING!!!

First, a little background info about this excellent spirit. First off it made right here in AMERICA!!!  It was named after the year that King Charles gave William Penn the land that became what we all know as Pennsylvania.

Pennsylvania is known for its agriculture and is one of the leading areas for Rye. Yes this is a Rye Vodka. Penn is crafted from several different organic rye from different farms in Pennsylvania.



My personal taste and opinion.... Out of all the Vodkas Ive tasted(and its been many) I actually like Penn 1681. Its a different taste, very clean, very smooth. This is a vodka that can be enjoyed alone or in your favorite cocktail. I made a couple Martini's(extra dry and dirty) and it paired together very well. Now it does have a little Burn, But its burns sooooooooooo good!!  I will say this. Its more of a drinker's vodka. Most beginners wont like it, but someone who is looking for a great substitute for some of the vodka that's out on the market now, and want something with a refined taste,  would truly enjoy Penn 1681.

Day 1 of the 30 for 30---> The Aviation

Classic Cars, Classic Music, Vintage clothes and appliances... Everyone loves them. Kinda gives you a glimpse into the past, and also lets you know how up to date items were derived.

So why not Cocktails?? Classic cocktails are making a huge comeback all around the country and Craft Bartenders are putting their own spins on these. So let me digress.. Ive been a bartender for a long time, and honestly(and I hate to say this) only in the last couple years Ive began to really discover, taste, and make the Classics. But in order to know where you are headed, you need to know where you came from.

So after some great advice I received from a fellow bartender( Thanks Josh, follow my boy and mixologist Josh Pearson on twitter @josh_pearson) Ive shifted my focus in this industry to the classics.. So for the next 30 days from the Turkey day all the way to Christmas day I will give you a classic cocktail, a little history, recipe and prep...

So what better way to start than with the time tested, excellent classic the "Aviation".


The Aviation
2 shots gin
1/2 shot lemon juice
Dash Maraschino
Dash Crème de Violette
Shake well with ice and fine strain in to a cocktail glass. Garnish with a Maraschino cherry.


The Aviation was was created by Hugo Ensslin, head bartender at the Hotel Wallick in NYC(my favorite city in the world) in the early twentieth century. The first published recipe for the drink appeared in Ensslin's 1916 Recipes for Mixed Drinks. Ensslin's recipe called for El Bart gin, lemon juice, maraschino, and crème de violette, a violet liqueur which gives the cocktail a pale sky-blue color. Upon some more research of this fine cocktail, I found that its also considered a variation of the Gin Sour and using the Maraschino as a sweetener.

Now I'm in the lab, and since I don't have any El Bart, I'm making my Aviation with 1st Tanqueray 10, and another with Hendrick's. The Tanqueray 10 really mixes well  and to me is the premier Gin in the industry today. Unfortunately I don't have any Creme de Violette, so I was unable to get the full experience today, but this is what i came up with in the lab....



So now my first 30 for 30 is done, I want to tell everyone to enjoy your Holiday! Eat Drink and be Merry! And hey while you at it, have yourself an Aviation!!!

Product Review-- Conjure Cognac

First off before i even get started, I just want to say, I LOVE COGNAC!!! Cognac has been a staple in my life since I could drink. I remember watching my Uncles, and older Cousins, sitting around playing cards or Dominoes with an array of Cognacs from Hennessey VS all the way to Remy XO. So it fell in place for me when i started drinking.

Now in my opinion there is only 1 true way to drink Cognac... And that is neat and in a snifter. Bur since Ive been in the cocktail industry I'm starting to see a trend of Cognac being used in many different cocktails. Being a Cognac lover this interests me because I wanted to see what someone could do with a drink that stands alone.

Which brings us to this weeks product review.. Conjure Cognac.





Normally I'm a Remy 1738 drinker only, but a couple of months ago, I was in Atlanta and decided to give this new company a try.  While I was down in the ATL every bar, restaurant and Hotel had this bottle that stood out to me. At that time I didn't know, but the Cognac is the Brainchild of Chris "LudaCris" Bridges, who happens to be one of my favorite hip-hop artists! So why I was out, hanging at the Velvet Room nightclub I ordered it straight as I always do my Cognac. What I tasted was simply the smoothest cognac Ive ever tasted.!! No bite, no burn, no aftertaste! Just pure, smooth, no hangover inducing Cognac. Personally, I alternated between this and Remy Martin to see if there was a distinct difference. AND it was!!! Conjure is slightly smoother than Remy, and your getting an equally exceptional spirit at a few dollars less than other Cognacs.



So my first question non the flight home was, Is this available in Illinois??? So I was following Conjure on twitter( @ConjureCognac) and on Facebook and got a release date for Illinois. So I ran to my favorite Liquor store and grabbed a couple bottles. So i played around with a few cocktails, and I decided hey.. I got a great drink which was featured on Cocktails 365(Another great blog, which you all should be reading too) So i used Conjure in the Naked Martini..

1 1/2 oz of X-Rated


1 oz of Conjure Cognac

Strain into a Chilled Martini Glass



Needless  to say,m that this was an added treat to an already great drink! The smoothness of the Conjure blends very nicely with the X-Rated since it has traces of a fruit blended Cognac in it as well, so it was a perfect match for the Conjure. This also is a Cognac that's the Ladies can enjoy in a mixed drink or alone as well.

Drink Measurements and Glassware

Hello all!!!

One of my bars i work is at a nightclub. If you're ever in the Chi some see me at Krush nightclub(shameless plug). In this club when we make drinks, we don't use traditional glassware. We have to use plastic cups. Why you might ask? Because if anything happens in the club(fight, altercation, accident,etc) having traditional Glasses can prove to be a hazard to myself, the other bartenders, and patrons all throughout the venue.




So,  You're probably wondering, why the hell is he telling us this? Well the #1 question I get posed while I'm at this spot is, "Is this the cup the drink comes in?" or "Can you make the drink stronger, since it comes in that cup?"

Now we use a standard 8oz. cup. So its a little shorter than a 12oz glass. The alcohol measurements don't change,just because its in a shorter cup!!! For example, I made a Long Island this weekend in a glass and a cup just to show someone that the size of the glass doesn't matter, its all about the measurements. A Long Island is a 1/2oz of Vodka,Gin,Rum,Tequila, and Triple Sec no matter what you put it in. The bigger the glass doesn't equate a stronger drink. Actually the bigger the glass is the more ice and juice!! The alcohol levels remain constant no matter what.



Also patrons, please stop asking for a "Strong Drink" or "Can you make my drink strong"? There is no such thing. Any respectable Mixologist/bartender is going to measure out the drink properly. My rule is this.. YOU WANT A STRONG DRINK, ORDER A DOUBLE!!!!

Every business has costs. In our business, alcohol is very expensive. So drinks need to be measured to keep costs down and be able to provide all you guys with new drinks and different brands when they come on to the market.

So the moral of today's post is, Trust your bartender! If i make you a drink, I know what I'm doing. The size of your glass and the drink measurements will even out. Who wants to be drunk from one drink because your bartender made it "Strong". You want to have a great cocktail, and be able to drink throughout your evening. And I want you to come back to the bar and continue to order drinks, and most importantly,.... TIP.

Drinks Of the Week


Hey everybody,

Back with a couple of drinks recipes, from my trip to New York a couple weeks ago. First one is the Ice Cream Soda. Had this at the Sweetwater on 139th in the South Bronx. This is a custom drink from their menu..Im usually skeptical when it comes to real sweet, blended drinks but this def is the exception to the rule... It wasnt too too sweet, but it had alot of kick on the backside..So here it is...Pic anbove is what it should look like...

Ice Cream Soda
2oz Captain Morgan
1oz Baileys
3/4oz Grenadine
10z Coca-Cola

Place all ingredients in a mixing cup, Shake then blend with Ice...

Put a Cherry on Top and Enjoy!

This one is for those of us who enjoy Jager Bombs, Lunchboxes and all other drinks with a shot dropped. It was a refreshing drink, not too strong, but def tasty. I enjoyed this at McFadddens on 40th and 2nd ave in Manhattan...

Part #1 My rules at the Bar

Whats up everybody? I finally got this whole blog thing going. So bear with me as I'm getting used to this. So Ill start by giving a little background info about myself. I have been a bartender for over 3 years professionally. Before that i was the bartender at all the parties and I was in Retail management. Bartending is a passion that i have had for many years. I remember watching "Cheers" with my grandmother when I was younger, and telling her I want to do that one day! So lately I've taken the moniker " The Black Sam Malone". lol I've worked in a few different environments from a nightclub, a neighborhood sports bar, to now I work at a banquet hall. All of these different locales have given me an interesting perspective to the nightlife industry.

Now that you have a little background about me, I feel the need to let you all in on a few secrets to making your bar experience a great one. Whether you are at a busy club, sports bar, or a wedding reception there are a few rules that you should always apply.Your bartender should always remain even tempered and always place customer service at the top of his/her priorities but here are a few things you guys(patrons) can do to make the night go a little easier on us and help to keep the party going... SO without any further adieu here is part #1 of my rules at the bar.


1. Do not make eye contact with the bartender if you do not want a drink.

Most bartenders are working a long bar. So if we have 10 customers on one end, and you are standing at the other end, if you make eye contact we will come down there to you. No one outside of the bartender can really understand how disheartening it is to leave customers just to go to the other end of the bar(usually running with 2 or 3 bottles in your hands) just for you to say you don't want anything.

2. You offer to buy a woman a drink and she refuses, she does not like you.(...which means: STOP TRYING)

Fellas take it from me, most women come to the bar to hang out just like we do. It doesn't always mean an open invitation to bug her the whole evening. I once saw a guy go down the whole bar, with the same rap offering to buy all the ladies a drink. All refused!! He gave up and tried to get the female bartender that was working with me with the same game!!! Trust guys, everybody likes free, so if she refuses, just pick up your pride and WALK AWAY!!!!!

3. If you can't afford to tip, you can't afford to drink in a bar. Go to the liquor store.

Self explanatory...Its been many nights I've worked a patron to death, answered all his questions, made the drink he had at his buddies house 2 weeks prior, and still only got a very small tip for a very large bill. Gratuity is a part of the game, so if your bartender takes care of you, take care of him/her.

4. Don't tell us you bartend too!

Yet another self explanatory one here. If you do bartend, Great!! But for the most part, making drinks at your friends house does not constitute as bartending. We don't come to your job and tell you how to be a banker, construction worker, accountant, etc.. So please don't give us mixology tips.

5. Don't string-order your drinks.

Please try and give me all your drinks at once. Don't tell me "2 sex on the Beaches" then i make those and you ask me for 2 more then after that a rum and coke. If its you and a few of your friends, have your order ready when you step up. I guarantee you will get the drinks faster and wont piss off the bartender either!

6. Do NOT lean as far as you can over the bar, in case I didn't see you. I see you.

I see you, and you leaning or standing on a chair or waving and yelling won't get me to you any faster. If anything it will get you ignored and just irritate you and me!!

7. Don't start the order off with, "GIVE ME A STRONG DRINK!"

Any respectable business has costs. And those costs stay down when the bartender measures the liquor and uses the right amount in each drink. A " Strong Drink" really doesn't exist. You want it stronger, order a double.

8. Don't COMPLAIN ABOUT PRICES!!

See Rule #3. If you got Hornitos money don't order Don Julio. Well and Call liquor are not as expensive as premium. And domestic beer is cheaper than Imported. So check your wallet before you get there. Complaining about the price is not gonna change them!!

9. Our names are NOT "Hey" or "Yo", nor do we respond to whistles, psst, or banging your bottle, glass or hand on the bar!

See Rule #6. This is a surefire way to get ignored, and then when i do get to you, I can guarantee the weakest drink EVER!!!!!

10. Last call is LAST CALL!

Please don't hang around the bar continuously asking for one more drink. Or sipping your drink slower. There is alot that goes on in the bar after hours. And the longer you are there that's the longer we are in the bar. Inventory, clean-up, glassware, money, trash, all need to be taken care of. We cant start until the bar is clear. So please respect the Last call and exit. 9 times outta 10 you'll be right back at the bar the next evening.

So I hope this gives you a little insight on how to keep the night going smooth for you and the bartender. We are the party starters and want you all to have a good night!! But we want a good night as well. So remember these tips and be sure to TIP YOUR BARTENDERS!!!!
