Product Review- Wilks & Wilson - Purveyors of Fine Elixers

Today I am happy to talk about a product that I truly enjoy working with. Alot of time, I make my own syrups, cordials, etc, But a couple good friends of mine have a product line that I really enjoy using in my cocktails.


Wilks & Wilson( Greg Wilson and Zachary Wilks) produce hand crafted, organic, and mostly natural elixirs that were intended for use in Non alcoholic beverages, but they are delicious in some of the classic cocktails of yesteryear. Now the interesting story about how I came to meet these guys is interesting. 2 years ago while I was in New Orleans for Tales of The Cocktail, Some friends and I were throwing around the idea of creating a product. Bitters, Syrups, and even a carbonated cocktail came into play. So someone close to me said, "hey you should meet this guy down here named Greg, who has a line of syrups. Its looks pretty cool." So thru the magical power of twitter( its great when used correctly) we tracked each other down and when I found Greg Wilson, I planned on  just talking but he handed me a 6 pack of his product and his card and said please stay in touch. So after getting home and unpacking a whole suitcase full of booze(don't ask, just come to TOTC and you'll find out) I took a look at this product.. What struck me 1st was the pictures on the labels and the wide variety of flavors and distinctions between them. Needless to say I was intrigued. So fast forward to this past Tales of the Cocktail and not only did I run back into Greg, but I got to meet Zachary Wilks as well. Great guys with a Great product that I can stand behind and use when taking care of my events.


Now that you got some background, lets get to the meat of the story, the product!!!

Now some of the best cocktails in the country are being made with Wilks and Wilson as it is available in Chicago, Indiana, St. Louis, Michigan, Massachusetts, and Kansas City most notably.

As stated earlier my favorite cocktail to make with their product is the "DrinkxXx On Me Mojito" using the Lime Mint Simple.. So why not share it with all of you..  I debuted  it last year at a guest bartending shift I had. It has since become a staple.  A different take on the Mojito recipe..

DOMojito
Muddled mint
Muddled Pineapple
2oz Flor De Cana Rum
1oz Wilks and Wilson Lime Mint Simple
1oz Orange Juice
2 dashes Fee brothers Orange Bitters

Garnish with a mint sprig and pineapple wedge

Big Start to 2014

Hello everyone!!

Took some time off from working and writing, but I would like to say Happy New Year from DrinkxXx On Me!!!

So I have some goals for myself in thus new year and one is to bring you all a blog post every day, starting today. Whether its Lifestyle, drink reviews, spirit reviews, some of my adventures in this crazy hospitality that I work in, or just if I want to shoot the Sh*t with all of my readers, you will all get something alcohol related from me. So GET READY!!

But with that being said, its been a hectic couple weeks in 2014 so far ni the liquor world. 2 BIG acquisitions happened in the first 14 days of 2014.

For one Sean "Diddy"Combs, the man behind the emergence of Ciroc, has partnered 50/50 with Diaego to acquire Deleon Tequila. Diddy is a master at marketing and getting the most out of his products. He puts his name on it and its golden. And Diageo, well, no words need be spoken about them. The strong Distribution, and access to influencers (like Combs) and marketing makes them a formidable team to push Deleon to the top of the tequila charts in 2014. Deleon is a 100% Blue agave tequila. Deleon was created in 2008, and hit the US market on Cinco De Mayo 2009. Its expressions are as follows, Blanco, Reposado, Anejo, Extra Anejo, and Leona. I'm looking forward to trying it, creating some cocktails and giving all of you a nice
review.

And just when the news of Diddy, started to quiet down, then a HUGE announcement came across all of our social media platforms...
Japan's Suntory ( which boasted the likes of Bowmore scotch and Yamazaki Japanese Whiskey) now has acquired Beam, Inc for a whopping price of $13.6 Billion dollars. Now nothing says America more than some good ol bourbon but now, 2 of the most recognizable names in whiskey, Jim Beam and Makers Mark will belong to a Japanese owner. Along with those brands, in this deal,  Suntory will have, most notably Courvoisier, Laphroaig,  and Knob Creek.

So its been some big moves made in the spirits biz to start the year off.. Cant wait to see what the rest of 2014 brings!! See you tomorrow with a product review of Wilks and Wilson, LLC..

Top 10 moments of Portland Cocktail Week

Portland Cocktail Week.... 1 word. WOW!!! I spent some of last week in the state of Oregon with about 200 other bartenders from all over the country. This was a great event to learn, associate, drink( we are bartenders) and generally remember why we chose this profession. This was my second time at PDXCW and this event has really set the bar for events in the future. So instead of just giving you a long recap of the entire week, I want to share with all of you my personal Top 10 moments from the week. Some will have visuals included.. Well the visuals that i can share.. lol

So here we go....


10. Winning 2nd Place in the Templeton Rye Shoes and Cue Horseshoe tournament.
Never played Horseshoes before, but drank plenty of Templeton and myself and my teammate Toki made it to the finals.

9. Swig and Swine 2013
The Bon Vivants did it again!! Always a great party, always for a good cause. Trashcan punch and plenty of Pig. AND all proceeds go to charity. I think Im going to gather all my Pig and Punch and Swig an swine t-shirts and have them framed.

8. Hale Pele
No other words be spoken.. Great Tiki Bar in Portland run by my main man Jesse Card.


7. Education
2 days, 8 classes. lots and lots of information. My course was "Beyond the Bar" TOok classes on sponsorship, Brand Ambassadorship, Dealing with the Press, Making cocktials on Camera, just to name a few.

6. Hennessy Dinner
The Uptown Billards Club was turned into the Hennessy House for the evening, where my Bar Major group enjoyed a 4 course meal paired with 4 cocktails made with the different expressions of Hennessy Cognac.

5. Rum Club shenanigans
Hanging with my "Superfriends" group of bartenders. the 6 of us shut down this great Portland cocktail bar 2 nights in a row. Thank you rto Adam and the rest of the team there for the cocktails.





4. Bar Mashup
1 night, 4 bars. We traveled by limo and Party bus between 4 bars in one night. Oven & Shaker, InterUrban, Hale Pele, and St. George Mobile Libation laboratory. Not to mention we shut down Rum Club after... EPIC night!!

3. Man I love them Strippers
 Im sure we paid a few ladies college tution over the past week, lol and I wont name names but we sure enjoyed our after school wind down time at Union Jacks, Sassy's and Mary's to name a few....


2. Field Trip Day
On the 3rd day we all had field trips to choose from. Mine was sponsored by Talisker and I had the opportunity to learn how to navigate and sail a sailboat. A once in a lifetime opportunity and I truly enjoyed being out on the water for 3 hours watching fighter jets fly above, and sailed right into Mount Hood. A religious experience

AND THE NUMBER 1 MOMENT OF THE WEEK WAS..............................

1. Murray Stenson
We had a service class and Mr. Murray Stenson was once of the speakers. If you don't know who he is, google him. He is a very instrumental person in the service industry and he got a standing ovation upon walking up to the podium. I even got the opportunity to chop it up with him for a moment and felt like I knew him forever. Great, GREAT person.


So that didn't even begin to touch how great of a week I had, or even all the things we did., This was just a few of the highlights for myself that stood out. I cant wait until next year to go back again.. Cheers to everyone I met last week and to my old friends who reconnected with me. I cant wait to see you all again!

Cocktail Thought for the Day 8-8-2013

In this last year I had the opportunity to head up a new program with Courvoisier USA as one of 8 Courvoisier "Courvoisiologists" from across the nation. We we in charge of executing events, new cocktails for the brand, and education. It was a great opportunity for me to expand my knowledge of the iconic brand and share it with many others. It all culminated with the Courvoisier lab event here in Chicago on June 5th. Cocktails, cocktails, and more cocktails. I was the featured mixologist and had 6 of my own created cocktails being featured at the event. But with that came the responsibility to really dig deep into the brand and learn about who I was representing. So with that the cocktail thought of the day today is all about Courvoisier Cognac. Anyone who knows me knows, I enjoy a finely distilled grape spirit, namely Cognac. Its a beautiful spirit and very very unique in its taste. So here is a little history about this iconic brand...

Background and Present day Facts about Courvoisier

The origin of Courvoisier goes all the way back to the 19th with Emmanuel Courvoisier and his associate Louis Gallois running a wine and spirit company. In 1811 Napoleon Bonaparte visited their warehouse in Bercy. The rumor is that Napoleon took several barrels of Cognac with him to St. Helena, which in turn, the ships officers began naming it, "The Cognac Of Napoleon." Courvoisier was also served at the 1889 opening of the Eiffel Tower. As far as the aging process of this fine cognac, the Vs is aged up to 8 years with the majority of it being Fins Bois grapes, the VSOP is aged up to 10 years with a little of 50% of it being Grande Champagne Grapes, and the XO Imperial being a blend of up to 40 different Cognacs. 

So now to present day. Not only does Courvoisier have just Cognac but they introduced a New Blend of Cognac and 2 liqueurs to add to the portfolio. C by Courvoisier, Courvoiser Rose', and Courvosier Gold. 
C by Courvoisier is a small batch Cognac blend selected from 50 different Wine Growers and is double barreled for a completely different type of experience. Rose' is a blend of Courvoisier and Premium red wine grapes, and Gold is truly a one of a kind blend of Courvoisier and Moscato grapes. So for the 1st time in a long time I'll leave this blog post with some of my own recipes with each expression for all of you. Feel free to try these at home, as I took a BYOB( Be your own Bartender) approach to make quality cocktails but also ones easy enough for the at home bartender..

Back to Blogging/Drink One Teach One



Hey everyone!

Its been a long time but Mr Mixologist has finally got the blogging bug back in his system. I have been a part of soooo many great events this year, and have so many coming up that I want to share them with all my Twitter/Facebook/Instagram followers. But before I get going I first want to say THANK YOU, to all who have supported me and DrinkxXx On Me bartending Service over the last few years, We started off doing house parties and now have grown to working for various spirit brands and hosting and bartending some of the biggest events here in Chicago.Now for those of you who have been a subscriber to this blog, thank you and now you're in for a treat because we will have postings on everything from Spirit reviews, to some of my favorite bar/restaurants, How to cocktail videos, and the ever infamous "Cocktail Thought of the Day".

So now that brings me to the point of this post today.. my ever famous catchphrase "Drink One Teach One". many have asked me where this came from and why do I always say it and use the hash tag on twitter( #DrinkOneTeachOne) Well here is your answer....

This phrase is the gist of my entire career. Unfortunately, in my community the overall "cocktail" scene is lacking. So when I''m working, or creating menus for clients I try to bring a little more cocktail awareness to the forefront. I love alcohol, I love all the different spirits that are out there(for the most part) and I love learning while I'm enjoying cocktails. Learning about the origin of a cocktail, or breaking down the flavors in the base spirit, or just figuring out all the ingredients in a cocktail while tasting blindly are some very enjoyable things to "Drink One Teach One". Understand spirits and know what you are putting inside your body. Its called "Edutainment" learn something and have fun all at the same time.

Now that im back in the blogging world, I look forward to sharing with you all my experiences, tastings, evenings out, events, recipes, and just views on different trends in the cocktail world. Happy Repeal Day!!!

Happy Repeal Day everyone. On January 16th, 1919 congress passed the 18th amendment outlawing alcohol consumption and sales. Repeal Day is the day that Prohibition ended with the passing of the 21st amendment of the United States on December 5, 1933. This year marks the 79th anniversary of this great day! 


During Prohibition, people continued to produce and drink alcohol, and bootlegging helped foster a massive industry completely under the control of organized crime. Drinking in speakeasies became increasingly fashionable, and many mothers worried about the allure that alcohol and other illegal activities associated with bootlegging would have over their children.  
The most effective depiction of prohibition era bootlegging, in my opinion,  and some of the tactics and things that were going on in this time of history is on my favorite television series Boardwalk Empire. Ironically I found out that the state of Utah(a Mormon state) was the one who ratified the 21st amendment, giving the 3/4 threshold needed to enact the 18th amendment. 


So take this day today, go out and celebrate responsibly, and enjoy a classic cocktail. Ill be celebrating with some friends this evening over some Zacapa Rum cocktails. I'll leave this posting with a few visuals from Prohibition and post Prohibition...

***New Cocktail*** Xante Prickly Pear

Hey everybody!

With the re-introduction of DrinkxXx On Me Bartending Service and my website(www.DOMBartending.com), I've been quite busy and have been blogging over there. But I am back and showing my blog spot family more love. We will link the blog here to the DOM website so that we are covered on all bases.

If you follow me on Twitter/FB/Instagram, you know now that I work for Xante here in Chicago. Ive been creating cocktails, working events, and overall having a Kick ass time!! Recently we started a #BYOB(Be your own bartender) series, and I am giving out recipes each week that the consumer can try at home. So this week with Fall approaching, I have come with a new cocktail that embodies a nice Sunday of football, greasy food, and you and friends relaxing and sipping cocktails. I present the "Xante Prickly Pear"

Mixing It Up Mondays

The second installment of Mixing it up Monday features a brand new cocktail that I created for Koloa Rum Company. I was hanging out in Binny's Beverage Depot and stumbled across a brand new Rum company to hit the shelves here in Chicago.. Bought a bottle and actually enjoyed the spirit. So a few weeks later via my twitter profile, the same company reached out to me to create a cocktail for the website. I jumped on the opportunity and here is what I came up with...

Apple Fritter
1.5oz Kaua'i White
1oz Lairds Apple Jack
.5 Spiced Simple Syrup
.5 Fresh Lime Juice
2 dashes homemade Apple Bitters
Garish with an Apple Slice or Cinnamon stick
Combine all ingredients in a mixing glass. Shake and strain into a chilled coupe glass. Garnish with a sprinkle of cinnamon and the slice of an apple.

Spiced Simple Syrup--
Equal parts sugar to water.(I use 2 to 1 myself) Add Allspice berries, whole cloves, cinnamon sticks, and anise pods.. Bring mixture to a boil, until sugar is dissolved and let steep for 5 minutes. Cool and bottle. Usually lasts a week while refrigerated.

Apple Bitters
(Recipe from the book- Bitters A Spirited History of the classic cure all by Brad Thomas Parsons) 




Peels from 6 medium to large (preferably organic) apples
Zest of half a lemon, cut into strips
2 Cinnamon sticks
.5 tsp Allspice berries
.25 tsp Coriander
.5 tsp Cassia chips
.5 tsp Cinchona bark
 4 Cloves
 2 cups High-proof bourbon
1 cup Water
2 tbsp Rich simple syrup (two parts sugar, one part water)

Place the apple peels, lemon zest, cinnamon, allspice, coriander, cassia, cinchona bark and cloves in a 1-quart Mason jar or other glass container with a lid. Add the bourbon, making sure all the ingredients are covered. (Add more bourbon if needed.) Seal, and store at room temperature out of direct sunlight for 2 weeks, shaking once a day. Strain the liquid through a cheesecloth-lined funnel into a clean 1-quart jar, squeezing the cheesecloth to release any excess liquid. Seal the jar and set aside.
Transfer the solids to a small saucepan and add the water. Bring to a boil over medium-high heat. Cover, reduce the heat and simmer for 10 minutes. Remove from the heat and let cool completely. Add the contents of the saucepan to another 1-quart Mason jar, seal and store at room temperature out of direct sunlight, for 1 week, shaking once a day. Strain through cheesecloth until all solids have been removed and add the liquid to the bourbon mixture. Add the rich simple syrup and shake to combine. Let stand for 3 days and strain through cheesecloth again to remove any debris. The bitters will last indefinitely, but for best flavor use within 1 year.
